Homemade Chicken and Noodles for large gatherings

Recipe Ingredients for Lucille's Homemade Whole Egg Noodles with Chicken

12 large Eggs
10 tsp table salt
5 1/3 cup White Enriched Flour
1 cup chicken, bone in
8 cups water
28 oz canned chicken broth

Recipe Directions for Lucille's Homemade Whole Egg Noodles with Chicken

  1. Put eggs and salt in large mixing bowl and stir together.

  2. Add flour a little at a time, mixing in with the eggs and salt mixture

  3. Flour your flat surface so you can roll out the dough

  4. Once the dough is dry enough to roll out, put out on the flat surface and roll dough out to desired thickness.

  5. You may need to add more flour on the top of dough while rolling out so it doesn't stick to the rolling pin.

  6. Once rolled out, cover with a clean dry cloth and let dry.

  7. Once dough is dry, cut into desired length. and turn over and let dry again.

  8. Once dried you may cut again into noodles.

  9. Store in freezer bags until ready to use.

  10. When ready to prepare:

  11. Add chicken to water and cook until done(this makes your broth)

  12. Bone the chicken and add meat to the broth.

  13. Bring to a boil and then add noodles.

  14. Add extra canned broth to pot until noodles are covered and won't dry out.

  15. Cook until noodles are tender about 20-25 minutes.

  16. Serve on the side, with mashed potatoes or just as a meal.

  17. Refrigerate any leftovers or may freeze again.
