Recipe Ingredients for lreneeco Split Pea Soup

1 1/2 cups dry split peas
12 cups water
1 tsp,+crumbled bay leaf
10 serving Salt Substitute
1 tsp. dry mustard
2 cups minced onion
5 cloves garlic, minced
10 oz celery
10 oz carrots, sliced
16 oz arugula, chopped
1 tbs freshly ground pepper
3 tbsp red wine vinegar
1 tbsp lemon juice
1/4 cup parsley
1 tsp dill
1 c raw almonds

Recipe Directions for lreneeco Split Pea Soup

  1. Soak Almonds overnight and peel skins.

  2. Place split peas, bay leaf, water and salt in a large pot. Bring to a boil, lower heat as much as possible and simmer, partially covered, about 20 minutes

  3. Add onion, garlic, celery, carrots Partially cover, and leave to simmer gently for about 40 minutes with occasional stirring. If necessary, add some water.

  4. Add black pepper, lemon juice, dill, ARUGULA and vinegar to taste.

  5. puree almonds with a bit of the water and add to pot.
