Hearty soup that is perfect for lunch

Recipe Ingredients for LP Tuscan white bean soup

1 lb cannelini beans
32 oz. vegetable stock
2 carrots
1 medium onion
3 cloves garlic
2 cups kale
4 oz. bacon

Recipe Directions for LP Tuscan white bean soup

  1. Boil dried beans for 10 minutes and let soak for > 1 hr (or soak dried beans overnight).

  2. Drain beans and rinse with fresh water

  3. Cut head of kale, carrots, onion, garlic clove and add to crock pot.

  4. Add spices (I used rosemary, black pepper corns and whole corriander seeds...mustard seeds might be good too)

  5. Add hamhock (or bacon or smoked turkey wing)

  6. Add beans and stock (to cover)

  7. Cook on low for about 9 hrs or until beans are a bit soft.

  8. Take some beans out and mash them to thicken soup to taste.

  9. Add salt, additional pepper to taste

  10. Share and enjoy
