These tasty mouth-sized treats can be served as an appetizer, or alongside a tasty salad as a light lunch or dinner. I bring them to parties and they are always a hit--they're even good chilled! As always, feel free to add your own touch. I often add a bit of hot sauce to the cream cheese mixture or experiment with different herbs.

Recipe Ingredients for Lox and Cream Cheese Stuffed Mushies

6 medium mushrooms
6 tbsp cream cheese
2 tbsp sliced green onion
1 tsp black pepper
2 oz lox (smoked salmon)
1/2 tsp salt (to taste)

Recipe Directions for Lox and Cream Cheese Stuffed Mushies

  1. In a medium bowl, mix together with a spoon cream cheese, sliced green onions (scallions), and black pepper.

  2. Tear or slice lox into small pieces, add to cream cheese, and thoroughly combine ingredients together by mixing. (I often use a whole small package of lox. I prefer wild sockeye for its flavor--you can always find this at Trader Joe's.)

  3. Take the 6 fresh portobello mushrooms (brown version of champignon, which is also okay to use) and wipe clean with clean dry kitchen rag or brush clean with mushroom cleaning brush. Mushrooms should be fresh with no visible gills or dampness.

  4. Remove stem by wiggling and pulling out. Fill center with spoonful of cream cheese mixture. It's definitely okay to over fill. :)

  5. Place mushrooms cap side down on a lightly greased baking sheet. Put into a preheated 375 degree oven for 20-25 minutes. Cream cheese should be slightly golden when done and the mushrooms may be slightly wilted due to loss of moisture.

  6. Remove from oven and allow to cool a few minutes before serving.

  7. Enjoy!
