Healthy, lowfat breakfast. Like a crustless quiche.

Recipe Ingredients for Lowfat Zucchini Frittata

3 c egg whites
3 eggs
2 T sour cream
2 T parsley, chopped
2 T oregano, chopped
1 clove garlic, minced
1 t salt
1 t pepper
3 medium zucchini, shredded
2 medium tomatoes, diced
4 ounces reduced fat cheddar cheese

Recipe Directions for Lowfat Zucchini Frittata

  1. Prepare 9.5 x 12 baking pan with a little cooking spray.

  2. Heat oven to 400.

  3. Shred zuchini.

  4. Dice tomatoes.

  5. Squeeze excess water from tomatoes and shredded zuchini. Break these up and place in the baking pan.

  6. Beat together whole eggs with sour cream.

  7. Wisk in egg whites.

  8. Add garlic and fresh herbs.

  9. Stir in salt and pepper.

  10. Pour egg mixture over veggies and stir.

  11. Bake for 40 minutes. Check--it should be firm. If not bake another 10 minutes.

  12. When firm, sprinkle top with shredded cheese and bake another 5 minutes.
