Recipe Ingredients for Lowfat Pear Almond Muffin

3/4 c dark brown sugar
2 T dark brown sugar
1/4 c sliced almonds
1/2 t ground cinnamon
1 c all purpose flour
1 c whole wheat flour
1 t baking soda
1/2 t salt
1/4 c canola oil
2 large eggs
1 c applesauce
1 t vanilla extract
3/4 c lowfat buttermilk
1 pear

Recipe Directions for Lowfat Pear Almond Muffin

  1. Combine both flours with the baking soda and salt in a medium-size bowl.

  2. In a large bowl, whisk together the 3/4 cup brown sugar and the oil until combined and uniform in color. Add the eggs, one at a time, whisking well after each addition. Whisk in the applesauce and vanilla.

  3. Add 1/3 of the flour mixture to the egg mixture, then add 1/4 c buttermilk, mixing just until combined after each addition. Continue adding the flour alternating with the buttermilk until all has been added. Gently stir in chunks of the peeled and cored pear.

  4. Fill 12 muffin cups almost full. Combine 2 T brown sugar with cinnamon, placing some on top of each muffin. Sprinkle sliced almonds on top of each muffin also. Bake at 400 F about 20 minutes.
