I'm still working out this recipe. Red grapes are preferable to green. You can prepare this in advance or whip up quickly if company arrives without warning. The yogurt takes the place of mayonnaise.

Recipe Ingredients for Lowfat Napa Valley Chicken Salad

1 chicken breast
1 tablespoon olive oil
2 tablespoons lowfat plain yogurt
12 grapes
2 tablespoons toasted almonds
1/4 cup celery

Recipe Directions for Lowfat Napa Valley Chicken Salad

  1. Dice the chicken into smaller than bit size pieces. Cook over medium heat with olive oil until done. Chill.

  2. Meanwhile, dice celery and cut grapes (red grapes) in half).

  3. When the chicken is chilled, mix with yogurt, almonds, grapes, and celery.

  4. Add a dash of salt and pepper if desired.

  5. Serve as sandwiches or dip.
