Lowfat and flavorful stew. Fast and easy with a chicken broth and jarred pasta sauce base.

Recipe Ingredients for Lowfat Chicken Stew

6 cups chicken broth
2 cups brown rice
4 cups tomato sauce
1 onion
1 red bell pepper
2 1/2 lbs boneless, skinless chicken breasts
1 3/10 lbs broccoli
1 tsp. salt
4 tsp. rosemary
2 cups frozen corn

Recipe Directions for Lowfat Chicken Stew

  1. Heat chicken broth, fresh rosemary and rice on medium stove.

  2. Simmer rice and add peeled tougher stems from broccoli & roughly chopped purple onion.

  3. Add pasta sauce, stir to combine and lower heat if necessary.

  4. While you are waiting for rice to cook, take partially frozen chicken, place on cutting board and cube into 3/4" pieces--it is so much easier when it is partially frozen.

  5. When rice is nearly finished cooking, add partially frozen chicken pieces.

  6. After two minutes, add remaining chopped broccoli and chopped red bell pepper.

  7. After chicken is cooked, remove from heat and stir in frozen corn.

  8. Add salt to taste.
