These are really good. Very moist. I "slimmed" down another recipe I had found and saved about 70 calories per muffin. I substituted my home canned pineapple zucchini for crushed pineapple

Recipe Ingredients for Lowfat Carrot and Pineapple Muffins

1/4 cup honey
1/2 cup applesauce
2 large eggs, beaten
3/4 cup whole wheat flour
3/4 cup unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
1 cup grated carrots
1 cup pineapple, drained
1/4 cup chopped walnuts

Recipe Directions for Lowfat Carrot and Pineapple Muffins

  1. Preheat oven to 375F.

  2. Combine the honey, applesauce and beaten eggs in a medium bowl and stir to mix well. Combine the flours, baking soda, baking powder and cinnamon in a separate bowl and mix together well. Add the dry ingredients to the liquid ingredients and stir just until blended. Add vanilla, grated carrots, pineapple and walnuts. Stir until just blended. Use pan spray in muffin cups with paper liners and fill 2/3 full.

  3. Bake for 15 - 20 minutes.

  4. Makes 1 dozen muffins.
