Made with whole wheat and white flour, so they're a little dense, but good. A great lowfat snack.

Recipe Ingredients for Lowfat Blueberry Muffins

1 cup whole wheat flour
1 cup flour
3 tbsp sugar
1 tsp baking powder
1/4 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
2 egg whites
1 cup skim milk
1/4 cup applesauce, unsweetened
1 tsp vanilla
1 cup blueberries

Recipe Directions for Lowfat Blueberry Muffins

  1. Preheat oven to 375 degrees F.

  2. Spray muffin tin with nonstick spray.

  3. In a medium sized bowl, combine whole wheat flour, white flour, sugar, baking powder, salt, nutmeg and cinnamon; stir to combine.

  4. In a small bowl, combine egg whites, milk, applesauce, and vanilla, and whisk until smooth.

  5. Add to dry ingredients and stir with a fork until batter is blended; do not over mix.

  6. Gently stir in blueberries.

  7. Spoon batter into muffin cups.

  8. Bake until muffins spring bak when touched lightly and are golden, about 15 minutes.

  9. Cool in pan for 5 minutes, then remove and serve warm.
