Recipe Ingredients for Lowfat blueberry muffins

3 cups whole wheat flour
3 tsp baking powder
3 tsp baking soda
1 1/2 tsp table salt
3/4 cup egg beaters
1/2 cup splenda brown sugar blend
1/4 cup splenda baking blend
1 1/4 cup unsweetened applesauce
1 tbsp vanilla extract
2 1/2 cups blueberries

Recipe Directions for Lowfat blueberry muffins

  1. preheat oven to 400 degrees F

  2. spray muffin tin with cooking spray

  3. combine flour, baking powder, baking soda, and salt in a medium bowl

  4. combine egg beaters, sugar, applesauce, and vanilla

  5. mix dry ingredients into large bowl

  6. mix with electric mixer until smooth

  7. fold in blueberries

  8. bake about 25 minutes or until toothpick comes out clean
