Recipe Ingredients for Lowfat Blueberry Muffins

1.5 cup Wheat Flour, White, All-purpose, Enriched, Bleached
0.75 cup Sugars, Granulated
0.5 tsp Salt, Table
2 tsp Baking Powder
0.33 cup Organics Applesauce
2 large Egg, White
0.5 cup Milk, Nonfat, Fluid
1 tsp Vanilla Extract
1 pint as purchased, yields Blueberries
3 tsp Sugars, Granulated
0.75 tsp Cinnamon, Ground
1 tbsp Butter

Recipe Directions for Lowfat Blueberry Muffins

  1. Preheat oven to 400 degrees.

  2. Combine dry ingredients (flour, sugar, salt, and baking powder) in large bowl.

  3. Combine wet ingredients (applesauce, egg whites, milk, and vanilla) in small mixing bowl.

  4. Combine wet and dry ingredients while stiring gently. Stop stirring when mixture looks wet, but not homogenous.

  5. Gently fold in blueberries.

  6. Pour into muffin pan that has been greased or lined, filling each cup about 3/4 full.

  7. Bake for about 17 minutes or until firm.

  8. Meanwhile combine remaining sugar, cinnamon, and melted butter to make a glaze.

  9. After muffins have cooled, brush glaze lightly on top of muffins.
