Recipe Ingredients for Lower Sugar Sweet Potato Casserole

40 oz canned sweet potatoes in syrup, drained (11647)
16 g (packets) Splenda
1/2 teaspoon salt
2 eggs
1/4 cup fat-free milk
1/2 teaspoon vanilla
55 g (1/4 cup packed) brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 tablespoon non-hydrogenated 68% margarine spread, melted (95574)
40 g (1/3 cup chopped) pecans

Recipe Directions for Lower Sugar Sweet Potato Casserole

  1. Heat oven to 350F. Spray 1 1/2-quart casserole with cooking spray.

  2. In large bowl, mash sweet potatoes. Stir in Splenda, salt, eggs, milk and vanilla; spoon into casserole.

  3. In small bowl, mix brown sugar, flour, cinnamon and margarine until well blended. Stir in pecans. Sprinkle over sweet potato mixture.

  4. Bake uncovered 35 to 40 minutes or until thoroughly heated
