The VERY healthy version of my famous broccoli, celery, onion soup.

Recipe Ingredients for Lower Sodium Vegetarian Broccoli, Celery, Onion Soup with Ginger

4 cups broccoli, chopped
2 cups celery, chopped
3/4 cup onion, chopped
1 tsp ginger, ground
1/2 tsp black pepper
1/2 tsp garlic powder
4 cups vegetable broth

Recipe Directions for Lower Sodium Vegetarian Broccoli, Celery, Onion Soup with Ginger

  1. Boil ingredients until soft in vegetable broth.

  2. Puree with stick blender.

  3. Add more ginger to individual servings to taste.
