I can't quite give up provolone cheese, but using non-fat ricotta and turkey helps keep the lasagna lower in fat.

Recipe Ingredients for Low(er) fat turkey lasagna

227 g lasagna noodles (9 noodles)
907 g fat-free ricotta cheese (1 2-lb container)
1 lb ground turkey
2 oz grated romano cheese
1/2 cup fresh basil leaves, chopped
6 g fresh oregano leaves (about 2 tbs finely chopped)
2 large eggs (Eggland's best)
30 slices provolone cheese
48 oz marinara sauce (2 jars of Newman's Own)

Recipe Directions for Low(er) fat turkey lasagna

  1. Cook the lasagna noodles in a large pot of boiling water - stir often to avoid clumping. Drain when tender and immediately spread on lightly greased plastic wrap to cool.

  2. Brown turkey in a cast iron skillet.

  3. Mix ricotta and romano cheeses, herbs, and eggs.

  4. Layer as follows: sauce, 3 noodles, cheese mixture, 10 provolone slices, turkey. Repeat and then top with sauce, 3 noodles and the last 10 provolone slices.

  5. Bake covered in 375F oven for 30 minutes, uncover and bake 15 minutes more.

  6. Let sit 15 minutes before serving (ideally, make the day before and then re-warm in the oven).
