A tasty way to add protein to your lunch. I used Hellmann's reduced fat Mayonnaise which is only 200 calories for the recipe, so total calories per serving can be adjusted by 258 calories, or 32 calories. Total calories per serving is 182.

Recipe Ingredients for Lower Fat Shrimp Salad

1 cup Chopped Celery
9 large Hard Boiled Eggs - chopped
1 pound boiled Shrimp - peeled, deveined, chopped
1/2 cup light Mayonnaise
2 tablespoons Light Sour Cream
1 tablespoon Mustard
2 tablespoon lemon juice
1/8 teaspoon ground black pepper
2 tablespoons Shallots - chopped
1 teaspoon dill weed

Recipe Directions for Lower Fat Shrimp Salad

  1. Boil Shrimp in pot of boiling water seasoned with Old Bay Seasoning until shrimp turn pink, and begin to float. Do NOT overcook.

  2. Boil eggs for three minutes in salted water(rolling hard boil), let stand for 5 minutes.

  3. Chop celery stalks into small pieces

  4. Mince shallots

  5. In a separate bowl, mix mayonnaise, sour cream, mustard, lemon juice, pepper and dill weed

  6. Peel and devein shrimp, mince.

  7. Peel Hard Boiled Eggs, chop into small pieces

  8. Add celery, eggs, shrimp and shallots to a separate bowl, mix well. Add mayonnaise mixture, and blend well.

  9. Cover bowl and chill for several hours. Mound the mixture on lettuce leaves and roll up, or add to shreaded lettuce. Can be spooned into hollowed out tomatoes.
