Lower Fat Pesto that's great to make ahead and freeze. 1 Serving = 1 Tbls.

Recipe Ingredients for Lower Fat Pesto

4 garlic cloves, peeled
4 cups basil leaves (about 2 1/2 ounces)
1/4 cup pine nuts
1/2 cup (2 ounces) grated fresh Parmesan cheese
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup warm water
3 tablespoons extravirgin olive oil

Recipe Directions for Lower Fat Pesto

  1. Drop garlic through food chute with food processor on;

  2. process until minced.

  3. Place basil and next 4 ingredients (basil through pepper) in processor;

  4. process 10 seconds.

  5. Combine water and oil in a measuring cup.

  6. With processor on, slowly pour oil mixture through food chute, processing just until blended.

  7. (Can also be prepared in a blender.)

  8. Serving = 1 Tlbs
