Mushroom, onion, and cheddar omelet.

Recipe Ingredients for Lower-fat Omelet

2 large eggs
4 egg whites
1/2 cup mushrooms, sliced
1/4 cup onions, diced
2 ounce cheddar cheese, grated

Recipe Directions for Lower-fat Omelet

  1. Whisk eggs and egg whites together. Add salt and pepper.

  2. Slice vegetables; saute in nonstick pan with vegetable spray. Set vegetables aside.

  3. Heat nonstick pan over medium heat. Pour in egg mixture.

  4. While egg mixture cooks, grate cheese.

  5. When egg mixture is mostly set, spread veggies on top and sprinkle with cheddar. Let the eggs cook the rest of the way, then fold and serve!
