Recipe Ingredients for lower-fat mashed potatoes

5 lbs white potatoes
1 1/2 c light soy milk
1 Salt
3/4 c margarine, light

Recipe Directions for lower-fat mashed potatoes

  1. Boil potatoes in water with salt added, till potatoes are soft and slide off easily when pricked with a fork.

  2. Drain potatoes.

  3. Put potatoes in large mixing bowl and salt.

  4. Add margarine, then cover. let sit for about 5 min so margarine can melt.

  5. Mash potatoes with a potato masher or pastry cutter.

  6. At first slowly, then more quickly, mix the potatoes.

  7. Add salt & milk alternately until it is the "right" consistency and taste (yes, this is one of those "to taste" recipes!).
