Lower Fat Mashed Potatoes with Cilantro

Recipe Ingredients for Lower Fat Mashed Potatoes

1 lbs. potatoes, peeled and cut into 1 inch pieces
2 tbs. unsalted butter
3 scallions, chopped
3 tbs. cilantro or parsley, chopped
1/4 cup plain nonfat yogurt
2 tbs. plain nonfat yogurt
1/4 cup skim milk
2 tbs. skim milk,
1/8 tsp. salt (optional)

Recipe Directions for Lower Fat Mashed Potatoes

Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 15 minutes or until tender. While potatoes are cooking, melt butter in a heavy saucepan over medium low heat. Sauté scallions 2-3 minutes or until translucent. Remove from heat and set aside. Drain potatoes and return to same saucepan. Add scallion mixture, remaining ingredients and pepper to taste. Mash thoroughly. Add more milk if potatoes are too dry.
