Lower Fat than traditional Lasagna

Recipe Ingredients for Lower Fat Lasagna

2 cups collards, chopped frozen
1 clove fresh garlic, minced
1/2 onion, diced
1/4 cup water
2 large eggs
1 tbs Olive Oil
7 ounce Mozzarella, Part Skim Milk, shredded
2 pound Sargento Fat Free Ricotta Cheese
8 ounce Wavy Lasagna Pasta, Dry
1 pound Ground Turkey Breast, 99% Fat-free
1/2 cup Parmesan, Grated Cheese
1/4 cup Fresh Basil Leaves
1/4 cup Fresh Parsley
2 cups Traditional Pasta Sauce
1 tsp Garlic powder
2 tbs Italian Seasoning
1 Ground pepper

Recipe Directions for Lower Fat Lasagna

  1. Boil 9 pieces (1/2 a 1 pound box) of the wavy lasagna pasta. Drain and reserve in col water while working on the other items.

  2. Saute onion, garlic, collards and 1 tbs of Italian Seasoning in Olive oil until partially soft. Add water and simmer until water evaporates. Remove to a bowl.

  3. Saute turkey in the same pan with 1 tbs of Italian Seasoning, some ground pepper and a sprinkling of garlic powder.

  4. Mix the Ricotta, eggs, parsley, garlic powder and most of the parmesan together in large bowl.

  5. Turn on oven to 375 degrees

  6. In a 9x11x3 inch baking dish layer the ingredients (3 layers of pasta). Start with a thin layer of sauce. pasta, cheese mix (sprinkled with mozzarella and chopped fresh basil) turkey then sauce. Use a third of the cheese and sauce in each layer but half of the turkey in the first two layers. The top layer is pasta, cheese mix and sauce topped with the remaining mozzarella, parmesan and fresh basil.

  7. Cover with foil and bake at 375 for 30 min. Reduce heat to 350, uncover and bake for 20 min or until top is browned and bubbling around the sides.

  8. Remove from oven an rest on a rack for 10 min before cutting.
