Using lean mince and no oil makes this chilli con carne a brilliant low-fat dish, delicious with rice or on top of baked spuds.

Recipe Ingredients for Lower-fat chilli con carne

500 grams lean ground beef
1 large onion, chopped
1 clove garlic, crushed
2 tsp chilli powder
1 tsp ground cumin
400 grams tomatoes
300 ml beef stock
1 red pepper
200 grams sweetcorn

Recipe Directions for Lower-fat chilli con carne

  1. Cook the mince in a large pan until it browns. Add the onion and garlic, stirring for a few mins, then add the chilli powder and cumin and stir over a low heat for another minute.

  2. Add the chopped tomatoes and stock. Stir together and bring to a simmer gently for 15 mins.

  3. Add the red pepper and simmer for another 10 mins, then add the kidney beans and sweetcorn.

  4. Season and cook for 5 mins. Serve with rice.
