This was an experiment that turned out beautifully. Using Bob's Red Mill Low-Carb baking mix helps to get a perfect consistency. Also, Ideal brand xylitol sweetener, brown sugar variety. The package says no calories, but the recipe calculated 9 per serving. In all, I would think this has about 12 g NET carbs per muffin.

Recipe Ingredients for Lower carb banana muffins

1 medium banana, mashed
1 tbsp lemon juice
1 egg
1 tbsp canola oil
1/3 cup 1% milk
1 tsp vanilla
1 cup Low-Carb Baking Mix
2 tbsp Soy Flour (Lowfat)
1 1/2 tsp baking powder
22 1/2 g Xylitol Sweetener

Recipe Directions for Lower carb banana muffins

  1. Preheat oven to 375F. Lightly oil a 6-cup muffin tin.

  2. Mash banana well with lemon juice. Beat in egg, oil, milk, and vanilla.

  3. Stir together all dry ingredients. Combine wet and dry ingredients with a few swift strokes; batter will be lumpy.

  4. Divide batter evenly into 6 cups in the muffin pan. Bake for 20 minutes, until lightly browned and tops spring back when touched. Remove from oven, and turn each muffin over in the pan and allow to cool 4-5 minutes. Serve warm, or refrigerate for later use.
