Recipe Ingredients for Lower calorie green chili chicken enchiladas

794 grams Macayo green encilada sauce
305 grams campbells heart healthy cream of chicken
40 oz Chicken, Breast, Meat Only
15 tortillas 6" White Corn Tortillas 30ct
16 oz Fat Free Cheddar
8 oz Light Sour Cream
1 medium (2-1/2" dia) Onions

Recipe Directions for Lower calorie green chili chicken enchiladas

  1. Preheat oven to 200 degrees F. Place chicken breasts in a pan and cover with water. Cover the pan and put it in the oven for 3-4 hours. Allow the chicken to cooll, and shred.

  2. Mix the condensed soup with the enchilada sauce. Add the shredded chicken.

  3. Spray a 9x13 glass baking dish with non stick spray. Lay 5 tortillas in the bottom covering it. Spread 1/3 of the meat mixture over them, add 1/3 the onions, and 1/3 the cheese. Repeat twice. Bake in 350 degree oven for 30-45 minutes, until brown and bubbly. Top with sour cream and garnish with chopped green onions and/or cilantro, if desired.
