Recipe Ingredients for Lower Cal Tapioca Pudding

1/3 cup sugar
3 T tapioca
2 3/4 cups skim milk
1/4 cup egg beaters
1 tsp vanilla extract

Recipe Directions for Lower Cal Tapioca Pudding

  1. Mix sugar, tapioca, milk and egg beaters in medium saucepan; let stand 5 minutes.

  2. Cook on medium heat, stirring constantly, until mixture comes to a full boil.

  3. Remove from heat and stir in vanilla.

  4. Cool 20 minutes; stir. Serve warm or chilled.

  5. Makes 6 1/2 cup servings.

  6. For creamier pudding, place plastic wrap on surface of pudding while cooling.
