2 lbs carrots
12 oz shallots
1 T olive oil
1 salt
1 pepper
2 T parsley leaves

Recipe Directions for lower cal roasted carrots and shallots

preheat oven to 450.toss carrots and shallotswith oil, season with salt and pepper. bake until tender 30-35 minutes, tossing once half way thru cooking . rmove from oven toss with parsley. serve
