Potato salad, just like Mom's... only without ALL the calories.

Recipe Ingredients for Lower-Cal Potato Salad

399 g potatoes
2 stalks celery
1/2 onion
5 tbsp Olive Oil Mayonnaise
2 tbsp relish
1/4 tsp paprika
2 tbsp dijon mustard
2 hard boiled eggs

Recipe Directions for Lower-Cal Potato Salad

  1. Wash and boil potatoes. Should be tender, but not mushy (I ALWAYS manage to undercook my potatoes.)

  2. Boil eggs.

  3. Dice celery, and onion. Put in bowl.

  4. When potatoes are boiled, while still hot, slice into small chunks. Put in bowl.

  5. Peel and dice egg. Put in bowl with potato and vegetables.

  6. Add Miracle Whip, relish, mustard and paprika. Mix well.

  7. Refrigerate until cool/overnight/whatever.
