The baking soda lowers the acid content of the tomatoes. Be careful adding it, though--too much will ruin the sauce!

Recipe Ingredients for Lower Acid Spaghetti Sauce

2 cup Diced Tomatoes, No Salt Added
10 tbsp Tomato Paste
1 tsp Oregano, Ground
1 tsp, ground Basil, Dried
0.25 tsp Pepper, Black
1 tsp Garlic Powder
1 tbsp chopped Onions
0.25 tsp Baking Soda
0.25 tsp Salt, Table

Recipe Directions for Lower Acid Spaghetti Sauce

  1. mix all ingredients except baking soda in a pot. Cook on medium low heat for about 15-20 minutes, stirring frequently.

  2. Remove from heat; stir in 1/8 tsp of the baking soda. Taste sauce; if still too tart, add about 1/2 of an 1/8 tsp. Stir it in and taste. Continuing add very small amounts of baking soda until desired flavor is reached.
