variation on ww zero point soup (from the 80s). Really good and super easy.

Recipe Ingredients for Low sodium Zero Point Soup

4 cups chopped onion
64 oz low sodium tomato juice
7 cloves garlic
3 cups carrots
4 cups zucchini
2 bunches spinach
5 cups chopped cabbage
1 tbls Italian seasoning
1 tsp red pepper
1 tsp pepper

Recipe Directions for Low sodium Zero Point Soup

saute onion & garlic. add tomato juice and spices. add carrots, cook while chopping zucchini, add zucchini, cook while chopping cabbage, add cabbage, cook while cleaning spinach. Add spinach. Cook 10 minutes. Add more spices as needed.
