Low Sodium Low Cal Vegetable Barley Soup

Recipe Ingredients for Low Sodium Vegetable Barley Soup

0.5 cup Barley, Pearled
16 oz Carrot
8 serving kitchen basics low sodium vegetable broth
2 clove Garlic
2 cup, pieces or slices Mushrooms
1 cup, chopped Onions
2 cup Beans, Snap, Green

Recipe Directions for Low Sodium Vegetable Barley Soup

  1. Add water and broth to pot.

  2. Chop and add all vegetables (these can be your choice)

  3. Add Bay leaves, parsley and garlic.

  4. Add barley and stir all.

  5. Bring to a boil and then lower and simmer for 90 minutes or until barley is done.

  6. Add lentils in last 10 minutes, stir and serve.

  7. Makes 8 hefty filling servings.
