Recipe Ingredients for Low Sodium Roasted Zucchini and Summer Squash

1/2 zucchini
1/2 squash
1/4 tsp salt
1/2 tsp black pepper
1 tsp oregano
1 tsp basil
2 tsp garlic powder
5 olive oil spray

Recipe Directions for Low Sodium Roasted Zucchini and Summer Squash

  1. Preheat oven at 400 degrees.

  2. Spray baking sheet with olive oil.

  3. Cut zucchini and squash in half lengthwise and then into 1-inch chunks.

  4. Spray with olive oil spray and toss with dry seasonings.

  5. Spread onto pan making sure that none overlap.

  6. Roast in oven for 30-35 minutes or until desired texture.
