Recipe Ingredients for Low Sodium Pasta Sauce

796 ml ground tomatoes
2 cloves garlic
1 red bell pepper, roasted
3 stalks celery, chopped
1 leek, chopped
1 carrot, chopped
10 mushrooms, chopped
1 T onion powder
1/2 T chili pepper flakes
1 T italian seasoning
1 T italian parsley
1 T olive oil
1 cup low salt chicken broth

Recipe Directions for Low Sodium Pasta Sauce

  1. Heat oil in a large sauce pan on med-high heat.

  2. Add leeks, garlic, and seasonings until fragrant. Add celery and carrots and heat through until colours are bright.

  3. Add 1/2 cup chicken broth and deglaze the pan with the juices.

  4. Add the tomatoes and the rest of the chicken stock. Stir and let simmer on low heat for 10 minutes.

  5. Add mushrooms and roasted red peppers and continue to simmer on low heat for another 10 minutes.

  6. Once all vegetables are softened, turn off the heat and use a hand blender to make a less chunky consistency, or serve chunky. Makes 6 cups.
