First Attempt at Low Sodium Lasagna with Chicken and Spinach. Pan divides easily to 6 large pieces. If you cut into 9 pieces use 0.67 in serving to get correct amount (6/9). If you cut into 12, use 0.5 (6/12), etc.

Recipe Ingredients for Low Sodium Lasagna w/Chicken and Spinach

366 grams 1% Lowfat Cottage Cheese, Small Curd, No Salt Added
58 grams Garlic
600 grams Chicken
16 oz Spinach
291 grams Cheese
755 grams (Francesco Rinaldi) No Salt Added Traditional (1/2 cup or 124g)
338 grams Lasagna
22 grams Parmesan Cheese

Recipe Directions for Low Sodium Lasagna w/Chicken and Spinach

  1. All the ingredients were weighed out, so use the weights. Used almost a full pound of cottage cheese, a jar and 1/4 of the sauce, 1 pound of spinach, 10 ounces of swiss cheese, 3/4 of a box of noodles, and about 6 chicken breast pieces, pre cooking weight.

  2. Instructions are mostly prepping the ingredients, then building the lasagna.

  3. Chicken: I cooked the chicken in a pan over low heat, then let cool, then sliced and diced into 1/4 inch pieces.

  4. Spinach: I wilted the spinach over low heat, then set aside on a plate to cool.

  5. Cheese Mixture: I used a food processor to mince the garlic, then added the cottage cheese and some of the sauce. I ran the processor for a minute then scraped down the sides to get all the garlic into the mix. Then processed for another minute.

  6. The Build: I sprayed the bottom of the pan with canola oil cooking spray.

  11. 45% of the spinach spread out, unfolding the leaves to get pretty good coverage

  14. 3-4 slices of the deli sliced swiss cheese spread over the sauce.

  15. Layer of noodles

  29. Finally shake the parmesan cheese over the entire deal.

  30. Bake at 300 for 40 minutes. Let cool for 20 minutes.
