A low-sodium version of the Easy Meatball Minestrone Soup!

Recipe Ingredients for Low-Sodium Easy Meatball Minestrone Soup

64 oz low salt chicken broth
16 oz. frozen mixed vegetables
16 oz. turkey meatballs
15 oz. white beans, drained and rinsed
14 1/2 oz. tomatoes, diced
1/4 cup tomato paste
1/4 tsp. dried Italian seasoning
1/4 tsp. ground black pepper
1/2 cup elbow macaroni, dry

Recipe Directions for Low-Sodium Easy Meatball Minestrone Soup

  1. Combine broth, vegetables, meatballs, beans, tomatoes with their liquid, tomato paste, Italian seasoning, salt and pepper in large saucepan or Dutch oven.

  2. Bring to boil over high heat. Reduce heat to medium-high; add pasta. Cook for 15 minutes, stirring occasionally, or until pasta is tender.

  3. Garnish with Parmesan cheese, if desired.

  4. (While this soup can be done quickly, I prefer cooking for a longer period of time to ensure that the vegetables and pasta are cooked and the flavors blend.)

  5. If you prefer using beef meatballs, substitute beef broth for the chicken broth.
