I used a banana muffin recipe from CC and made some changes - still yummy!

Recipe Ingredients for low sodium banana muffins

1 cup all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1/4 cup flax meal
1/4 cup wheat germ
1 cup bananas, mashed
1/4 cup sugar
1/2 cup applesauce
2 eggs
1/2 tsp vanilla

Recipe Directions for low sodium banana muffins

  1. preheat oven to 350 degrees.

  2. combine all dry ingredients.

  3. mash bananas.

  4. add sugar and applesauce to mashed bananas, mix well.

  5. add eggs and vanilla to banana mixture, mix well.

  6. add liquid mixture to the dry ingredients and mix until just blended.

  7. spoon into muffin tins - using either muffin cups or baking spray.

  8. bake 15-20 minutes, until toothpick comes out clean.
