Recipe Ingredients for Low-Point Tapioca Pudding

1 T. tapioca
1/3 c. Splenda
2 3/4 c skim milk
3 egg whites
1 tsp. vanilla

Recipe Directions for Low-Point Tapioca Pudding

  1. mix together tapioca, Splenda, milk and egg whites. Let stand five minutes

  2. Bring to a full boil over medium heat, stirring constantly.

  3. Remove from heat, stir in vanilla

  4. Cool at least 20 minutes; stir.

  5. Serve warm or chilled. Store in refrigerator. Makes 6 (1/2 cup) servings
