A wheat free, low gluten version of an old favorite

Recipe Ingredients for Low gluten pancakes

1/4 cup oat flour
1/4 cup spelt flour
1/2 tsp cinnamon
1/8 tsp mace
1 tsp baking powder
1/8 tsp sea salt
20 g vanilla whey protein powder
2 tbsp ground flax seeds
1/2 cup unsweetened soymilk

Recipe Directions for Low gluten pancakes

  1. Mix all dry ingredients in a bowl.

  2. Slowly mix in soymilk a little at a time.

  3. Pour desired amount in hot skillet or griddle greased with non-stick spray or butter.

  4. Cook one side until bubbles burst and pocks remain, flip and cook other side.
