Low calorie, low GI cookies.......

Recipe Ingredients for Low GI Oat, Maple Syrup & Nut Cookies

1 1/4 cup oats
1/4 cup maple syrup
1/8 cup splenda
1/8 cup brown sugar
1/4 cup wholewheat flour
1/4 cup ground almonds
1/4 cup soya flour
1/6 cup margarine
1/4 cup mixed nuts
1/8 cup dark chocolate chips
1 tsp cinnamon
1 tsp vanilla essence
1/2 tsp baking powder
1/2 tsp salt
2 egg whites

Recipe Directions for Low GI Oat, Maple Syrup & Nut Cookies

  1. mix together in a bowl the splenda, maple syrup & brown sugar.

  2. add the margarine and mix together.

  3. add the vanilla and egg whites, mix again - don't worry if the mix splits that's perfectly normal.

  4. add the soya flour,whole wheat flour,ground almonds, baking powder, salt and cinnamon. Mix together.

  5. Mix in oats, nuts and chocolate chips.

  6. Place drops on baking tray using tea spoon and press down with a wet fork.

  7. Cook at 170 for 15 - 20 minutes -turn and check every 5 minutes
