Recipe Ingredients for Low GI Flax & Oat Power Breakfast Muffins

1 cup applesauce, natural
1 egg
1 tablespoon vanilla extract
3/8 cup brown rice syrup
1/2 cup oats
4 tablespoons flaxseed, ground
1/4 cup whole wheat graham flour
1/4 cup almonds, sliced
1/2 cup craisins
1/2 teaspoon baking soda
3/8 cup soy flour

Recipe Directions for Low GI Flax & Oat Power Breakfast Muffins

  1. Preheat oven to 350 deg.

  2. Beat applesauce, egg, vanilla and syrup in bowl.

  3. Mix oats, flax, flour, protein and baking soda together.

  4. Add wet mixture to dry ingredients, do not over mix.

  5. Add in nuts and craisins.

  6. Three (3) of the eight (8) muffins have thirty five (35) calories of dark chocolate chips added.

  7. Enjoy.
