Sweet Potato Pie which features ingredients which are low on the Glycemic Index.

Recipe Ingredients for Low G. I. Sweet Potato Pie

1 1/2 cups flour (Stone Ground Whole Wheat)
1/2 cup lard
1/4 cup flaxseed meal
1/2 tsp salt (optional)
1 cup boiled sweet potato
1/2 cup butter
1 cup Splenda
1/2 cup cream
2 eggs
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1 tsp vanilla extract

Recipe Directions for Low G. I. Sweet Potato Pie

  1. Crust:

  2. Mix flour and flaxseed meal together. Add a half teaspoon of salt, if desired. Cut in lard with two table knives, and slice mixture over and over until particles are pea- sized. Then, add a tablespoon of ice water at a time to keep mix workable. DO NOT ADD TOO MUCH WATER. Grease 9- inch pie pan and press crust into pan.

  3. Filling:

  4. Puree sweet potato and soften butter. Mix together. Add Splenda, eggs, cream, pumpkin pie spice, cinnamon, and vanilla extract. If you don't like ginger, nutmeg can be used instead of pumpkin pie spice. Mix until smooth. Pour into uncooked pie crust.

  5. Bake:

  6. Bake at 350 degrees for 55- 60 minutes, or until a knife inserted into the middle of pie comes out clean. Set aside for one hour before slicing. Pie will rise like a souffle as it cooks, but it will settle as it cools.
