Low fat version of Olive Garden Soup

Recipe Ingredients for Low Fat Zuppa Toscana

6 tbsp skim milk
8 oz sausage, meatless
12 fl oz chicken broth
24 fl oz water
3 tbsp salt
2 potatoes, sliced
6 cups kale
6 cloves of garlic
2 tbsp tomato paste
6 tbsp canola oil
1 leek

Recipe Directions for Low Fat Zuppa Toscana

  1. Dice leek and garlic.

  2. Sweat leek and garlic on low heat in large soup pot.

  3. Stir in 2 tbsp of garlic and sun dried tomato spread or substitute with 1 tbsp of tomato paste.

  4. Brown meatless sausage and break up the sausage log like it's ground beef.

  5. Deglaze pot with chicken broth and water.

  6. Season with salt.

  7. Drop in sliced potatoes.

  8. Cover and boil for about 20 minutes or until potatoes are tender.

  9. Chop up 1 bunch of kale and dump the kale in the pot.

  10. Turn off the heat and cover the pot again for another 5 minutes or until the kale is wilted.

  11. Finish off with 6 tbsp of non-fat half & half or substitute with skim milk (not as good!).

  12. Stir to combine and ladle it up!
