These are delicious morning muffins. You may decide to cut down on the sugar if you want, or omit the walnuts to lower the fat content. This can also be made into nice loaves for zucchini bread.

Recipe Ingredients for Low Fat Zucchini Walnut Muffins

3 tbsp ground flaxseed
1/2 c. water
1/2 c. oil
1/2 c. unsweetened applesauce
1 tsp. vanilla extract
2 c. sugar
1/4 tsp baking powder
1 tsp baking soda
2 tsp. cinnamon
1 tsp nutmeg
3 c. whole wheat pastry flour
2 c. grated zucchini
1/2 c. walnuts

Recipe Directions for Low Fat Zucchini Walnut Muffins

  1. Process the flaxseed and water in a food processor for 2 minutes. Add oil, unsweetened applesauce and vanilla and mix well. Add sugar and blend. Fold in zucchini.

  2. In a separate bowl sift together baking powder, baking soda, cinnamon, nutmeg and flower. Add the walnuts to this and distribute evenly.

  3. Combine the dry mix with the wet ingredients and mix until just combined. Pour into muffin tins.

  4. Bake at 350 degrees for 30--35 minutes.
