Zucchini and tomatoes go well together in this baked vegetable dish. A little cheese and breadcrumbs on top adds a nice crunch.

Recipe Ingredients for Low Fat Zucchini and Tomato Gratin

2 medium zucchini, thinly sliced
2 medium roma tomatoes, thinly sliced
1/2 cup mozzarella cheese, shredded
1/3 cup breadcrumbs
1 Freshly ground black pepper

Recipe Directions for Low Fat Zucchini and Tomato Gratin

  1. Preheat oven to 350 degrees.

  2. Spray a small gratin dish with cooking spray.

  3. Cover the base of the dish with sliced zucchini, then create a second layer with the tomatoes.

  4. Repeat until all the zucchini and tomatoes are used.

  5. Sprinkle with shredded cheese, breadcrumbs and black pepper.

  6. Bake for 35 minutes.
