Low Fat Zucchini Muffins Recipe

Zucchini muffins. The recipe called for nutmeg as the spice flavoring, but you could do all kinds of different flavors. I added 1/2 tsp of Chinese Five Spice. Could do a Chai variety with cinnamon, cardamom, and clove. I also thought about adding in some pumpkin puree, but don't know what I would substitute. Maybe find a pumpkin muffin recipe and add zucchini. As a side note, my 13 month olds LOVE these muffins.

Recipe Ingredients for Low Fat Zucchini Muffins

1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup Flour, All Purpose
1 cup Whole Wheat Flour
3 Teaspoon Baking Powder
0.25 tsp Salt, Table
0.5 cup Sugars, Granulated
2 tbsp Vegetable Oil, Canola
1 large Egg, Whole
0.33 cup (not packed) Raisins, Seedless
0.25 cup, chopped Pecans

Recipe Directions for Low Fat Zucchini Muffins

  1. mix all dry ingredients in a big bowl.

  2. mix all wet ingredients in a smaller bowl. Add zucchini to wet ingredients.

  3. Pour wet ingredients into dry and mix until just combined (don't over mix).

  4. Fold in rasins and nuts.

  5. Divide into muffin 12 space tins (lined with cup-cake wrappers)

  6. Bake at 400 degrees for 20 minutes.
