Recipe Ingredients for Low-fat Zucchini Chocolate Chip Muffins

1 1/2 cups flour
3/4 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 egg whites
1/2 cup unsweetened applesauce
1/8 cup skim milk
1/8 cup nonfat yogurt
1 teaspoon vanilla extract
1 teaspoon lime juice
1 cup shredded zucchini
1/2 cup chocolate chips

Recipe Directions for Low-fat Zucchini Chocolate Chip Muffins

In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg whites, applesauce, milk, yogurt, lime juice, vanilla, and zucchini; mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until muffins test done.
