Recipe Ingredients for Low fat zucchini bread

5 egg whites
1 cup brown sugar
3/4 cup Splenda
1 cup unsweetened applesauce
1 tsp. vanilla extract
3 cups zucchini, grated
1 cup whole wheat flour
1 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
2 tbsp. cinnamon
1/4 tsp. nutmeg

Recipe Directions for Low fat zucchini bread

  1. Preheat oven to 325F.

  2. Combine eggs, sugar, Splenda, applesauce, and vanilla. Add zucchini, mix well.

  3. Sift dry ingredients together and add to wet ingredients a little at a time.

  4. Bake for 1 hour or until knife inserted in middle comes out clean.
