Recipe Ingredients for LOW FAT Whole Wheat Pumpkin Chocolate Walnut Muffins

15 oz pumpkin puree
1 1/2 cups whole wheat flour
3/4 cups light brown sugar
1 egg
1 tsp salt
1 1/4 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
1/2 cup skim milk
1 cup chopped walnuts
1 cup dark chocolate chips

Recipe Directions for LOW FAT Whole Wheat Pumpkin Chocolate Walnut Muffins

  1. Preheat oven to 350 degrees F.

  2. Sift the flour, baking soda, salt, cinnamon and nutmeg into a large bowl.

  3. Mix in the pumpkin, brown sugar, milk, egg and butter until well blended.

  4. Pour into a greased 9x5 inch loaf pan (or 12 muffin tin) and smooth the top.

  5. Toss walnuts and dark chocolate chips in a tablespoon of flour, and add to the bowl. Fold in gently and combine.

  6. For loaf: bake for 1 hour, or until a toothpick inserted into the center comes out clean.

  7. For muffins: bake for 20-24 minutes, or until a toothpick inserted into the center comes out clean.
