Recipe Ingredients for Low-Fat Whole-Wheat Blueberry Bran Muffins

1 cup nonfat milk
1 tablespoon lemon juice
1 1/2 cups wheat bran
1/2 cup unsweetened applesauce
2 egg whites
1/4 cup Splenda sugar substitute
2 tablespoons honey
1 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries

Recipe Directions for Low-Fat Whole-Wheat Blueberry Bran Muffins

  1. 1.Preheat oven to 350 degrees.

  2. Grease 12 muffin cups or use paper muffin liners.

  3. Mix together wheat bran, milk and lemon juice, and let stand for 10 minutes.

  4. 2.In a large bowl, mix together applesauce, egg whites, Splenda sugar substitute, and vanilla.

  5. Beat in bran mixture.

  6. Sift together whole wheat flour, baking soda, baking powder, and salt.

  7. Fold into bran mixture until just blended.

  8. Fold in blueberries.

  9. Scoop into muffin cups - use 1/3c to scoop.

  10. Bake in preheated oven for 18-20 minutes, or until tops spring back when lightly tapped.
