Uses chicken broth, but veggie (or beef) broth could be used instead / as well.

Recipe Ingredients for Low-Fat Vegetable Soup

6 cups fat-free chicken broth
6 cups tomatoes
1 tbl minced garlic
1 onion, chopped (about 1 cup)
8 ounces fresh mushrooms, quartered (about 2 cups)
3 zucchini, chopped 9about 4 cups)
2 carrots, chopped (about 1 cup)
1 potato, chopped (about 1 3/4 cups)
3 tbl chopped fresh parsley
2 tbl chopped cilantro (optional)
1 tsp dried basil
1 tsp dried oregano
1 salt to taste
1 pepper to taste

Recipe Directions for Low-Fat Vegetable Soup

  1. Heat a 4-quart Dutch oven on medium heat.

  2. Add vegetable broth & tomatoes.

  3. Add remaining ingredients as prepared.

  4. Cover & bring to a boil.

  5. Reduce heat and simmer until vegetables are tender, about 30 minutes.

  6. With a slotted spoon, transfer 3 cups of the cooked vegetables to a blender or food processor.

  7. Add about 1/4 cup cooking liquid and purée until smooth.

  8. Return the purée to cooking liquid.

  9. Season to taste with salt and pepper and serve.
