Recipe Ingredients for Low fat Vegetable Soup

2 tbsp olive oil
16 oz onions
16 oz carrots
3 lbs cabbage
16 oz cauliflower
8 cups broth, vegetable
8 oz mushrooms
1/2 oz parsley
8 oz broccoli

Recipe Directions for Low fat Vegetable Soup

Cook carrots and onions in the olive oil until the onion are translucent. Add the broth and bring to a boil. Add the cabbage and cauliflower, cook until cabbage is just done. Add the mushrooms and the parsley and cook for 5 minutes. Add the broccoli. Let stand for 10 minutes. Enjoy.
